Most flow, temperature, pressure and analyser loops can be characterised by three parameters:

Process Gain, Kp (not the same as Controller Gain, Kc)
Process Dead-time, DT
Process Lag-time, T lag

There practical way to obtain the dynamic values is by pefroming step testing and producing a step response. The controller is put into Manual mode, a step change is made to the controller output (typically control valve) and the process response is plotted on a graph. The dynamics are calculated from the graph. It is advisable to look for interactions as the methods used in this tool are not suitable for cases where there are interactions.
